Citrus, Fennel and Pomegranate Winter Salad

A delicious blend of seasonal vegetables and fruits to help make the season bright. 


If you were to ask me how to describe this citrus, fennel and pomegranate winter salad, the only thing that comes to mind- is fresh and bright. 


Studded with jewels of pomegranate seeds- this salad will bring some festive color and delight to any table spread!

Citrus, Fennel and Pomegranate Winter Salad Recipe:


Winter Citrus Salad with Fennel, Orange, Pomegranate Seeds and Spring Mix Greens

Ingredients:


1-2 Fennel bulbs, rinsed, fronds cut off and saved for garnish and topping

2-4 oranges, for color variation try a combination of naval, cara cara or blood oranges 

1 container of pomegranate seeds/arils(you won’t need them all- so save them for a snack!)

Salad greens if using- see pictures for two different variations for serving. I used a spring mix variety here.


Method:


Cut the fennel bulb in half and slice thinly.

Peel the oranges and cut away the white part/pith.


Place the greens in a bowl(or arrange fennel, oranges, and pomegranate on a pretty platter for serving), top with the fennel, orange slices/segments and sprinkle pomegranate seeds over the top in a ratio for how you might like to enjoy. 


Top/garnish with chopped fennel fronds, and any additional mix-ins/toppings. 



Optional Mix-ins: 

Olives

Torn mint leaves

Nuts

Cheese


Dressing:

Feel free to pick one that you enjoy, or make your own. I often pair this recipe with a lemon style dressing.
