5 ingredients and less than 15 minutes is all you need to make this great tasting white bean dip.
Ingredients:
15 oz. Cannellini beans, drained and rinsed
2 Garlic cloves, peeled
Juice of half of a lemon, and zest
2-3 Tbsp Parsley
2-3 Tbsp Extra-virgin olive oil
Salt and pepper to taste
Method:
Put the cannellini beans, garlic, juice of half of a lemon, zest from half of the lemon, parsley, salt and pepper to taste, in a food processor.
Pulse until coarsely chopped.
With the machine running, slowly drizzle in the olive oil, until desired consistency is reached. If you like it even thinner, add 1-2 Tbsp. of water.
Taste, and re-season with salt, pepper, and desired seasonings.
Notes:
To change up the flavor, try adding:
Rosemary and/or oregano
Cumin and cayenne pepper
Caramelized onion
Roasted red peppers or sun dried tomatoes, or,
Sauté garlic in the oil, and add the garlic and oil in the add oil step
If making ahead, store in the refrigerator. It will stiffen a little bit, but just give it a stir.
