Roasted Apple, Potato and Onion Hash

Mixing sweet and savory, this roasted apple, potato and onion hash can be served and eaten for breakfast, dinner, or really at any time of day.


Ingredients:


1-2 Potatoes, rinsed and cut into ½ -¾ cubes

1 Small red onion, peeled, and cut into ½ -¾ inch pieces

1 Apple, rinsed and cut into ½ -¾ inch cubes

1 Tbsp. garlic and herb infused oil

Salt and pepper to taste

Sprig of parsley, rinsed, for garnish(optional)


Method:

Preheat oven to 425 degrees Fahrenheit.


Place the cut up potatoes, apple, and onion onto a baking tray.


Drizzle with garlic infused olive oil and sprinkle with salt and pepper to taste.


Mix all the ingredients together, so that they are all nicely coated, and the seasoning is evenly distributed.


Bake in the oven for about 20-25 minutes.


Garnish with parsley, if desired.


Recipe variations: Try using sweet potatoes, or winter squash, in replace of the potatoes, or add in some other veggies for a whole new take. I bet Brussel sprouts would taste amazing!
