A delicious side or appetizer, these roasted mini sweet peppers are easy to make and easy to eat.
Ingredients:
2 lbs. Mini Sweet Peppers, rinsed and dried
1 Tbsp. Garlic and herb infused oil
Salt and Pepper to taste
Method:
Preheat oven to 425 degrees. Place peppers on a sheet pan, drizzle with oil and sprinkle with salt and pepper to taste. Toss the peppers to coat evenly with the oil and seasoning. Spread out the peppers so that there is space in between each one. .
Roast for about 20-25 minutes, or until the peppers charred in places and tender.
