“Oh hmm...two I guess. Passing them around the Christmas dinner table and making sure you had a nice crusty piece of Italian bread to put them on. And then second would be the spreads that Grandma would put out for lunch - the tray of lunch meat, the Arthur Avenue bread and the roasted red peppers, and making a really tasty sandwich.”

Roasted red peppers were always placed right on the table, along with the place settings, and stayed on the table throughout the duration of the meal. We often passed roasted peppers with bread, used them as a sandwich topping(oh my gosh, delish), or for some people we just put them on a plate and ate them with cheese, with our protein, or, quite frankly… simply, as is.

Roasted Red Peppers(Italian Marinated Roasted Red Peppers) Recipe
Ingredients:
1 Jar Roasted Red Peppers, drained, and sliced into thin strips
2 cloves of garlic, peeled and chopped
1-2 tsp, parsley, rinsed and chopped
1 tsp olive oil
Salt and pepper to taste
Method:
Put all the ingredients into a bowl.
Stir gently to combine.
Give it a taste and adjust seasoning to your liking.
If not serving right away, place in your refrigerator until ready to eat.
This mixture tastes best when given a little time for the flavors to come together and permeate.
Other ways to serve roasted red peppers:
As an accompaniment to a charcuterie board
As part of any appetizer or antipasto spread.
Atop a sandwich or salad
